Flahavan's Oatmeal Gingerbread
Ingredients
¾ cup / 96g all-purpose flour
¼ cup / 32g Flahavan’s Irish Oatmeal
¼ cup / 32g light brown sugar
2oz / 60g butter
2½ tbsp black treacle (can substitute molasses)
1 tsp ground ginger
1 tsp mixed sweet spices (e.g. cinnamon, nutmeg)
1 large egg, well beaten
1 teaspoon baking soda
3 tbsp milk
Directions
Preheat oven to
180°C/350°F/Gas Mark 4
. Line a seven inch square baking pan with well-buttered, greaseproof paper.
Melt the butter, sugar, and treacle in a saucepan over low heat. Sift the flour and baking soda into a bowl. Add the oatmeal and spices.
Next, add the melted butter and treacle mixture, the beaten egg, and the milk to the bowl. Stir until all is completely blended.
Pour into baking pan and bake for around 45 minutes.
Allow the cake to cool for ten minutes, and serve with sweetened whipped cream or vanilla ice cream.
