Honey, Nuts & Fruit Granola with Choc Chips

Crunchy, sweet and bursting with flavour this is a granola recipe to beat all others!

Serves 8|Takes 50 minutes

INGREDIENTS:

1 2/3 cups of Flahavan’s Oats
1 cup of whole cashew nuts
1 cup of flaked almonds
1/2 cup of coconut flakes
1/3 cup of honey
1/2 cup of light brown sugar
1/2 cup of butter
1/4 cup of dried apricots, chopped
1/3 cup of dried cranberries
2/3 cup of dark chocolate chips

METHOD:

Heat the oven to 300 degrees Fahrenheit. Place the Flahavan’s Oats, cashew nuts, flaked almonds and coconut flakes into a large bowl. Melt the sugar, honey and butter in a small saucepan and bring to boiling point. Remove from the heat, pour over the oat mixture and mix well. Spread out onto a lined baking sheet and bake for 30-40 minutes. Remove from the oven every 10 minutes and toss well bringing the mixture from the edges of the tray towards the centre. Once the granola is golden throughout, remove from the oven and cool. When cold add the chopped apricots, cranberries and chocolate chips.

Top Tip: Store in an airtight container for up to two weeks.
