Berry Compote Overnight Oats

Make-ahead Overnight Oats with a delicious seasonal twist!

Serves 4-6|Takes Min. 2 hours

INGREDIENTS:

Overnight Oats Ingredients:

1 cup of Flahavan’s Oats
1 & 3/4 cups of milk of choice
1 tbsp. of chia seeds
3 tbsp. of honey
1/3 cup of chopped or flaked almonds

Berry Compote Ingredients:

3/4 cup of raspberries

3/4 cup of blueberries
3/4 cup of strawberries
Zest & juice of 1 orange
2 tbsp. honey

METHOD:

Overnight Oats Method:

Put the Flahavan’s Oats into a lidded container with the chia seeds and add 90% of the milk. Stir well, cover and refrigerate overnight. In the morning add the rest of the milk if it’s too thick. Before serving, fold in the almonds and serve with the berry compote.

Berry Compote Method:

Trim the strawberries and cut into small pieces. In a small pot, combine all the ingredients and mix well. Quickly bring to the boil, then reduce the heat and simmer for 3-4 minutes. Transfer to a bowl to cool, then refrigerate for an hour or overnight. Serve with the Overnight Oats in the morning.

Top Tip: Frozen fruit can also be used to make the compote.
