Oatmeal with Lemon Curd & Blackberries

A wonderfully indulgent and mouthwatering oatmeal recipe to inspire and delight!

Serves 4|Takes 25-30 mins


For the oatmeal

1 1/3 cups of Flahavan’s Rolled Oats
1 2/3 cups of full fat milk
4/5 cup of water
Pinch of salt

For the lemon curd

Grated zest and juice of 2 lemons
4 eggs beaten
4 1/2 tbsp. butter cut in small pieces
3/4 cup of castor sugar

To serve
A Tablespoon of toasted almonds
3/4 cup of blackberries or blueberries


Stir oats into milk, add a pinch of salt.
Bring to the boil and simmer for 5 minutes stirring continuously.
Pour porridge into serving dish.
Lemon curd
Place all the ingredients in a heatproof bowl over a pan of simmering water. Stir until the sugar is dissolved and continue to stir for about 15 minutes until thick enough to coat the back of the spoon.
Remove from the heat allow to cool.
This will last up to a week in a sealed container in the fridge.
To serve
Divide the porridge between 4 bowls, put a large tables spoon of lemon curd on top of the porridge and sprinkle with toasted almonds and blackberries or blueberries
