Roasted Rhubarb Oatmeal

Take oatmeal to the next level with these toppings!

Serves 1|Takes 20 minutes

INGREDIENTS:

1/2 cup of Flahavan’s Rolled Oats

1 1/4 cups of whole milk

5 cups of rhubarb

3/8 cup of light brown sugar

Clementines

Fresh figs

 

METHOD:

For the oatmeal:

Stir the rolled oats into the milk.

Bring to the boil and simmer for 3 minutes stirring continuously

For the toppings:

Roasted Rhubarb: Wash the rhubarb and cut into 2 inch pieces. Place in an oven proof dish in a single layer and sprinkle over the light brown sugar. Cover with foil and bake for 15 minutes at 350F. Remove the foil and bake for another 5 minutes.

Add the remaining fruit.
