Ham & Cheddar Muffins by Lili Forberg

These muffins by Lili are the perfect lunchbox fillers!

Serves 12|Takes 25 minutes

INGREDIENTS:

1.5 cups of self-rising flour
1/2 cup of Flahavan’s Rolled Oats
1 tsp. of baking soda
1 tsp. of baking powder
1/4 cup of olive oil
2 eggs
1 cup of natural yogurt
1 cup of grated cheddar
1 cup of chopped ham
1/2 tsp. of salt

METHOD:

Mix all ingredients leaving ham and cheese till last. Grease a muffin tray or use baking sheet papers. If you’re using silicone muffin moulds you don’t need to grease them. Divide evenly, sprinkle some cheese on top and bake on 350°F for 16 minutes
