Strawberry Muffins by Lili Forberg

These muffins by Lili Forberg are a perfect healthy lunch idea!

Serves 12|Takes 30

INGREDIENTS:

1 cup of self raising flour
1 cup of Flahavan’s rolled oats
1 tsp. of baking soda
1 tsp. of baking powder
1/3 cup  of olive oil
1/3 cup of brown sugar
1 egg
1 tsp. of vanilla essence
1 cup of natural yogurt
1 cup of chopped strawberries

METHOD:

Mix all ingredients in one bowl keeping the strawberries until last. Grease a muffin tray or papers. If you’re using silicone muffin moulds you don’t need to grease them. Sprinkle some oats on top.
Bake on 350°F for 20-22 minutes
