Raspberry Coconut Oat Bars
Ideal lunch-box fillers or afternoon snacks, these oat bars make for a delicious treat!
Serves 12 Bars|Takes 35-40 mins
INGREDIENTS:
250g Flahavan’s Rolled Oats
1 Banana
1 tsp baking soda
2 eggs
50g melted butter
1 cup milk (/plant-based milk alternative of choice)
1/3 cup brown sugar
1/4 cup desiccated coconut
1 tsp vanilla extract
1 cup raspberries (either frozen or fresh)
METHOD:
Mash the banana and add in the remaining ingredients, leaving the raspberries until last
Fold the berries in gently, leaving some extra raspberries aside
Add the mixture to a lined baking tin and add the extra raspberries on top
Bake at 350°F for approx. 25-30 mins or until the top is golden brown
Leave to cool before cutting them into bars
