Caramel Apple Oatmeal Cookies
A guaranteed crowd pleaser!
Serves 12|Takes 12 hours
INGREDIENTS:
2/3 cup Flahavan’s Quick to Cook Steel Cut
1/2 cup unsalted butter
1 1/2 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp salt
1 tsp. ground cinnamon
1/2 cup granulated sugar
1/2 cup light brown sugar
1/2 tsp vanilla extract
1 large egg
1/2 cup peeled, cored and small-diced Granny Smith apples
10 crushed hard caramel candies
1/4 cup chopped walnuts
1/4 cup white chocolate chips
METHOD:
Prepare the cookie dough the day prior to baking:
In a small skillet over low heat, heat the butter and cook until golden brown. Remove from head and set aside.
In a medium bowl, combine apples, 1/2 teaspoon cinnamon, chopped caramel candies, walnuts and white chocolate chips. Mix to thoroughly combine and set aside for later use.
In a medium sized bowl combine flour, baking soda, salt and 1/2 teaspoon of cinnamon. Set aside.
In a stand mixture with a paddle attachment, combine prepared browned butter and brown sugar and granulated and mix until smooth.
Add vanilla, egg and oats and return to mixing for approximately 1 minute.
Slowly add in the flour mixture until fully combined to create cookie dough.
Add apple mixture to the cookie dough mixture and mix until incorporated. Transfer mixture to an air tight container and refrigerate overnight.
Bake the cookies the following day:
Preheat oven to 350°F.
Prepare two sheet pans with parchment paper and portion prepared cookie dough into tablespoon sized balls.
Bake for approximately 12 minutes, cool and serve.
