Summer Berry Loaf by Lili Forberg

This fruit loaf by Lili Forberg will give you the perfect taste of summer!

Serves 8|Takes 75 minutes

INGREDIENTS:

1 cup of Flahavan’s oats
1 cup of self raising flour
1/4 cup of granulated sugar
1/4 cup of brown sugar
1 tsp. of baking soda
A pinch of salt
1 large egg
3/4 cup of buttermilk
1/2 cup of oil / butter
2 teaspoons of vanilla extract
1 cup of raspberries
1 cup of blueberries

METHOD:

Combine the dry ingredients in a bowl.
Add the egg, butter, buttermilk and vanilla extract and mix thoroughly
Gently fold in your seasonal fruits
Place in lightly oiled loaf tin and bake in the oven for approx. 55 minutes at 350 degrees Fahrenheit.
