Tropical Oatmeal

Bring your oatmeal from winter to summer with this tropical delight!

Serves 2|Takes 10 minutes

INGREDIENTS:

For the oatmeal:

1 cup of Flahavan’s Oats
1 cup of whole milk
3/4 cup of water

For the toppings:

4 tbsp. of desiccated coconut
1 mango (chopped into small cubes)
1 lime, zest and juice

 

METHOD:

For the oatmeal:

Add all the ingredients into a medium saucepan and bring to a low simmer on medium-high heat.
Turn the heat to low, and simmer for around 5 minutes, stirring occasionally, until the oats have softened and thickened.

For the toppings:

Toast the desiccated coconut in a medium dry frying pan, on a medium heat until lightly golden and set aside.
Peel and cut mango into small cubes, zest and then juice lime and combine together.
Spoon the mango and lime onto hot oatmeal, then top with a sprinkle of toasted coconut.
