No Bake Chocolate and Cherry Granola Bars
Serves 12|Takes 25 minutes
1 & 1/3 cup of Flahavan’s Organic Jumbo Oats
1 & 1/4 cup of dates, stoned
1 & 1/3 cup of toasted blanched hazelnuts
2/3 cup of dried sour cherries
1/3 cup of dark chocolate buttons, roughly chopped
1/2 cup of almond butter
5 & 1/2 tbsp. of maple syrup
5 tbsp. of ground flaxseed
Line an 8 inch square loose bottom brownie tin with baking parchment.
In a small saucepan, gently warm the maple syrup and almond butter until smooth and combined.
Meanwhile, tip half the hazelnuts into a food processor and process until finely ground. Add to a large mixing bowl with the oats. Then, roughly chop the remaining hazelnuts and add these into the mixing bowl.
Add the dates to the food processor and process until finely chopped and they come together into one ball. Then, add these, the maple syrup and peanut butter to the mixing bowl, along with the remaining ingredients. Stir and, once combined, use your hands to bring the mixture together.
Tip the mixture into your prepared tin and press into an even layer using the back of a spoon. Chill in the fridge for 20-30 minutes, before slicing into bars. Enjoy!
