“Nuts about Fruit” Honey & Oat Bars
Try this gorgeous recipe for an oat-based snack bar packed full of delicious fruits and nuts!
Serves 12-14|Takes 40 minutes
INGREDIENTS:
1 cup of Flahavan’s Oats
2/3 cup of walnuts, broken
2/3 cup of flaked almonds
1/3 cup of desiccated coconut
1/3 cup of honey
1/4 cup of light brown sugar
1/8 cup of butter
3/4 cup of dried fruit – apricots, cranberries, sultanas etc.
METHOD:
Heat the oven to 350 degrees Fahrenheit. Put the Flahavan’s oats, walnuts, almonds and coconut onto a baking sheet and bake for 10 minutes. Tumble into a bowl and reduce the oven temperature to 300 degrees Fahrenheit. Put the honey, brown sugar and butter into a small pot. Whisk together while melting and bring to a boil. Pour it over the oat mixture and combine thoroughly. Transfer to a lined 8 x 11 inch baking sheet and press down well. Bake for 20-25 minutes until golden brown. When cool, cut into bars and store in an airtight container.
