Vegetable Fritters by Lili Forberg
These vegetable fritters by Lili Forberg are a perfect healthy lunch idea!
Serves 6|Takes 15 minutes
INGREDIENTS:
1/2 cup of Flahavan’s rolled oats
1 grated carrot (100 g)
Handful of baby spinach
1/3 cup of sweetcorn
1/3 cup of grated cheddar
2 eggs
1/2 cup of self raising flour
1/2 tsp salt
1 tbsp rapeseed oil for frying
METHOD:
Mix everything in a bowl.
Heat oil on a non stick pan.
Scoop mixture using an ice cream scoop or a spoon. Let cook for 4/5 mins until golden. Turn over and cook on both sides until golden.
Serve with sour cream or natural yoghurt.
