Banana Oat Pancakes
A healthy twist on brunch, these pancakes are filled with oaty goodness!
Serves 4|Takes 10 minutes
INGREDIENTS:
1 cup of Flahavan’s oats
2 eggs
2 medium ripe bananas
½ level tsp. baking powder
2 tbsp. of low fat milk
To Serve:
Greek yoghurt
Fresh summer berries
Maple syrup (optional)
METHOD:
In a blender, combine all the ingredient for 2-3 minutes until smooth then allow to stand for 5 minutes to thicken.
Add a ladle of batter per pancake to a heated pan and cook until golden brown, turning when the edges of the pancakes look set.
Serve warm with greek yoghurt, fresh berries and a drizzle of maple syrup (optional).
